That's not a hypothetical, it's particles coming off the board and going straight into your food. There's a second issue with plastic that has nothing to do with microplastics: knife grooves. Every slice leaves a small scar in the surface, and unlike wood, plastic can't be sanded back down. What about wood?

Research from UC Davis found that when bacteria like Salmonella and E. coli land on solid wood, they get pulled down into the fibers, away from the surface, where most of them die off within minutes to hours. That's a real, documented self-sanitizing property, but it comes with an asterisk: it only holds up for tight-grained hardwoods like maple, walnut, or teak, and only when the board is properly cared for.

And that's where wood gets complicated. To keep that protective quality, a wood board needs hand washing (never the dishwasher), upright drying so moisture doesn't sit in the fibers, monthly oiling to keep the surface sealed, and occasional sanding once knife grooves build up. Skip any of that for long enough and you lose the exact benefit that made wood safe in the first place, you're left with a porous surface that can crack, warp, hold onto moisture, and absorb odors and stains from whatever you last cut on it.
